    Lemon: Lemon Ambrosia Muffins

    List of Ingredients

    2 cups flour
    2 teaspoons baking powder
    1/2 teaspoon baking soda
    1/4 teaspoon salt
    1/4 cup sugar
    1/2 cup shredded coconut meat
    1 tablespoon fresh grated lemon rind
    2 eggs, room temperature
    8 ounces lemon flavored yogurt, room temperature
    1 teaspoon vanilla
    1/4 cup butter, melted

    TOPPING:
    1/4 cup shredded coconut meat
    2 tablespoons finely chopped pecans
    2 tablespoons brown sugar
    1/8 teaspoon ground nutmeg

    Recipe

    Prepare ambrosia topping and set aside. Grease 12 muffin cups or use paper liners. Preheat oven to 400ºF. In a large bowl, combine flour, baking powder, baking soda, salt, sugar, coconut and lemon peel. Stir to mix well. In a medium bowl, lightly beat eggs; stir in yogurt, vanilla and melted butter. Add to flour mixture and stir only until dry ingredients are moistened.

    Spoon batter into muffin cups, filling 2/3 to 3/4 full. Sprinkle top of each muffin with a heaping teaspoon of topping. Bake in 400ºF oven for 25 to 30 minutes, or until a wooden pick inserted in center comes out clean. Serve hot with butter. Makes 10 to 12 muffins. For topping, combine all ingredients.
