    Bran: Weight Watchers Honey Bran Muffins

    List of Ingredients

    1 1/4 cups flour
    1 cup lowfat 1% milk
    1 tablespoon baking powder
    1/3 cup honey
    1/4 teaspoon salt
    1/4 cup oil
    3 ounces bran flakes
    1 egg -- lightly beaten

    Recipe

    Preheat oven to 400ºF. Line 12 muffin cups with paper liners. Mix together flour, baking powder and salt in medium bowl. In another bowl, combine remaining ingredients. Let stand until cereal softens, 2 - 3 minutes. Pour wet ingredients into dry and stir til just moistened - do not overmix. Spoon into muffin cups, about 2/3 full. Bake 18 - 20 minutes, until muffins are golden brown & toothpick comes out clean. Cool on rack. Makes 12 servings.
