    2 envelopes active dry yeast
    1/2 cup lukewarm water (105°F)
    1 teaspoon sugar
    1 cup whole wheat flour
    4 cups bread flour
    2 teaspoons salt
    1/4 teaspoon ground coriander
    1/4 pound bacon, crisply cooked and crumbled
    2 tablespoons bacon drippings
    1-1/2 cups milk, scalded and cooled to lukewarm (105°F)
    1/4 cup firmly packed brown sugar
    1 egg

    Recipe



    In a large mixing bowl, dissolve yeast in water with sugar; let stand until foamy, about 5 minutes.  Add whole wheat flour, 3 cups bread flour, salt, coriander, bacon, bacon drippings, milk, brown sugar, and egg to dissolved yeast; beat until smooth.  Beat in remaining bread flour.  Cover; let rise in a warm, draft-free place until doubled, about 1 hour.

    Spray 2 8x4-inch loaf pans with non-stick vegetable spray. Stir batter down.  Spoon into prepared loaf pans; push down into corners of pans.  Cover; let rise until batter reaches the tops of the pans, about 30 minutes.

    Preheat oven to 375°F. Bake for 40 minutes or until loaves are a deep golden brown and tester inserted in center comes out clean.  Carefully remove from pans; cool completely on a wire rack.

    Makes 2 loaves
