    Farmer's Breakfast Casserole (ham)

    List of Ingredients

    3 cups frozen cubed hash brown potatoes, slightly thawed
    1/2 cup grated pepper Jack cheese
    1/3 cup grated Cheddar or Monterey Jack cheese
    1 cup cubed ham
    6 to 8 green onions, sliced
    4 large eggs
    1-1/2 cups milk
    1/4 tsp salt
    Freshly ground pepper

    Fresh strawberries, for garnish

    Recipe

    1. Preheat oven to 350 degrees (F).

    2. In an 8x8-inch lightly sprayed baking dish, arrange a layer of hash browns, grated pepper Jack and Cheddar, ham and green onions. In a medium bowl, whisk together eggs, milk, salt and pepper to taste. Pour egg mixture over potato mixture.

    3. Bake, uncovered, until set -- about 50 minutes. Let stand for 10 minutes. Cut into squares and serve, garnished with strawberries.
