    Multi-Grain Pancakes

    adapted from Jane Brody's Good Food Book

    List of Ingredients

    2/3 cup whole wheat flour
    1/3 cup flour
    1/4 cup cornmeal
    2 tablespoons wheat germ
    2 teaspoons sugar
    1 teaspoon baking powder
    1/2 teaspoon baking soda
    1/4 teaspoon salt
    1 1/4 cups rice or soy milk
    1 tablespoon lemon juice
    2 egg whites

    Recipe

    Mix dry ingredients together. In another bowl, mix wet ingredients with a whisk until the mixture is a little foamy (about 30 seconds). Mix wet into dry. Make pancakes as usual.
