    1 cup heavy cream
    1/2 cup light cream
    2 eggs
    2 egg yolks
    2 tablespoons tomato paste
    1/4 cup grated Parmesan cheese
    1/4 cup shredded Swiss cheese
    1/4 teaspoon salt
    1/8 teaspoon pepper
    1 9-inch pastry shell, unbaked
    2 tomatoes, thinly sliced
    1/4 teaspoon thyme
    2 tablespoon grated Parmesan cheese
    2 tablespoons shredded Swiss cheese
    2 tablespoons butter or margarine, cut into small pieces
    2 tablespoons chopped parsley

    Recipe



    Preheat oven to 375°F. In a large mixing bowl, combine heavy cream, light cream, eggs, and egg yolks; whisk until blended.  Stir in tomato paste, Parmesan cheese, Swiss cheese, salt, and pepper.  Pour into prepared pastry shell.  Arrange tomato slices on top; sprinkle with Parmesan cheese and Swiss cheese.  Arrange butter over the top. Bake 25 to 30 minutes or until a knife inserted near the center comes out clean.  Let stand for 10 minutes before cutting.  Sprinkle with chopped parsley.
