    List of Ingredients




    2 eggs, beaten
    Salt and pepper
    1/2 teaspoon Dijon mustard
    1/4 cup finely chopped onion
    1 cup shredded Cheddar cheese
    1 9-inch pie shell, unbaked
    1 tomato, thinly sliced
    1 green pepper, cut into thin slices
    2 thin slices ham, cut into thin strips
    1 tablespoon oregano

    Recipe



    Preheat oven to 350°F. In a medium bowl, combine eggs, salt, pepper, mustard, onion, and cheese; mix until well blended.  Pour into prepared pie shell. Arrange slices of tomato, green pepper, and ham on top; sprinkle with oregano. Bake 30 to 40 minutes or until pastry is lightly browned and egg mixture is set.
