    Eggs & Dairy: Buny's Breakfast Scramble Muffins

    Fixed this this morning and yum... it's a keeper for me. Next time I am going to try it with smoked cheddar or with brie...

    List of Ingredients

    2 large eggs
    2 tbl. milk (can use water or cream or half and half)

    1 English muffin, split
    2-3 tbl. shredded cheese (I used provolone)
    snipped fresh chives to taste
    snipped fresh dill to taste

    butter as needed

    Recipe

    Ok.. crack the eggs into a bowl and add the liquid.. beat up with fork untill reasonably well blended. Heat a small skillet up over med. low heat and put in a pat of butter. Once butter is melted and bubbly, pour in your eggs and sprinkle with salt and pepper.

    Put the English muffin in the toaster and set it for desired level of brown-ness. Butter it when it's done (suppose this is optional...)

    Once eggs begin to firm up and you see cooked bits starting to form, turn heat on up to high. Use spatula to scramble by gently shoving cooked parts around so uncooked egg can hit heated surface. Once half cooked thru (this goes really fast, be careful) sprinkle on snipped chives and dill, and sprinkle on shredded cheese. Continue to scramble gently. Take them off the heat while they are still very moist and look just underdone. If you cook them all the way in the pan they will be overcooked by the time they get to your plate. Then dump on top of the English muffin halves and season to taste.

    Am sure this would be good with different cheeses or fresh herbs you have on hand. May even try it on heated biscuit or croissant next time.. or to cut up cooked ham or bacon and toss that on top as well just before serving..
