    3 tablespoons butter
    3/4 cup milk
    salt and pepper
    3 egg yolks
    4 tablespoons flour
    2 ounces parmesan cheese
    nutmeg
    3 stiffly beaten egg whites

    Recipe



    Melt the butter. Stir in the flour. Beat in the milk. Season with salt, pepper and nutmeg. Stir over strong heat until boiling; remove. Add the cheese to the egg yolks. Fold in the beaten egg whites. Fill a buttered souffle dish to a fingers width from top. Bake at 400ºF for 20-25 minutes. Serve with baked tomatoes and crusty bread for a simple elegant meal.
