    Waffles: Gingerbread Waffles

    Adapted from The Art Of Quick Breads

    List of Ingredients

    2 1/2 c unbleached flour
    1/4 c brown sugar -- packed
    4 tsps baking powder
    1 tsp baking soda
    1 tbsp ginger
    1 tsp cinnamon
    1 tsp allspice
    2 egg whites -- whipped
    1 1/2 c Fat-Free Buttermilk -- * see note
    1/4 c molasses
    6 tbsps fat-free sour cream
    3/4 c raisins

    Recipe

    Prepare waffle iron with cooking spray and heat up. In a mixing bowl, combine flour, brown sugar, baking powder, baking soda, ginger, cinnamon, and allspice. In another mixing bowl, combine egg whites, buttermilk, molasses, sour cream, and raisins. Add dry ingredients with wet ingredients just until moistened. Pour enough batter to fill two-thirds of the waffle iron. Cook until crisp and golden brown; set aside. Repeat with remaining batter. Serves 8.

    NOTES : Notes: Fat-Free Buttermilk: Combine 4 1/2 teaspoons vinegar with enough skim milk to equal 1 1/2 cups; let stand 5 minutes.
