    List of Ingredients

    1 1/4 cups flour
    1 teaspoon baking powder
    1/8 teaspoon salt
    2 tablespoons butter
    1/3 cup currants
    1/3 cup milk -- (1/3 to 1/2)
    oil for frying

    Recipe

    In a mixing bowl, combine flour, baking powder and salt. Cut the butter in until mixture resembles coarse meal. Stir in he currants. Add just enough milk, a little at a time, to make a firm dough like a pie crust. Roll out onto a well floured surface to a 1/4" thickness. Cut into rounds about 2 1/2 inch in diameter. Coat bottom of a heavy frying pan with oil. On low heat, fry the cakes for 4-5 minutes on each side, until nicely browned. Serve piping hot spread with butter and jam.
