    Blintz: Oat n' Cheese Blintzes

    List of Ingredients

    CREPES:
    1 1/2 cups oat flour
    2 cups skim milk
    4 eggs
    2 tablespoons oil

    FILLING:
    3/4 pound lowfat cottage cheese
    2 tablespoons light cream cheese
    1 egg yolk
    1 teaspoon honey
    1/2 teaspoon grated lemon rind
    1/2 teaspoon vanilla
    1/8 teaspoon cinnamon

    Recipe

    Crepes: In large bowl, combine eggs, flour, and milk; mix till smooth batter, consistency of heavy cream. Pour into 2c. measure with pouring lip and let stand for at least 1 hour (can be mixed overnight). Pour 1/4 c. of batter into greased nonstick 8" skillet and tilt to spread evenly. Cook for 1 minutes on each side. Remove from pan and place on a towel. Repeat with remaining batter. Makes about 20 crepes.

    Filling: Combine all ingredients, mix by hand or in food processor. Place heaping tablespoonful of filling into each crepe. Roll once, then fold the sides over towards the center and roll again. Filling should be nicely enclosed. Place in lightly buttered baking dish, brush with tiny bit of butter and bake at 350ºF for 15 minutes. Can also be sauteed. Makes enough filling for 16 crepes. Serves 5.
