    Pork: Chinese Fragrant BBQ Pork

    List of Ingredients

    1/3 cup cream sherry
    1/3 cup soy sauce
    1 teaspoon sugar
    1 tablespoon chopped fresh ginger
    1 tablespoon minced garlic
    2 pounds pork roast
    1/3 cup ketchup
    1 tablespoon dry mustard
    3 teaspoons water

    Recipe

    Combine wine, soy, sugar, ginger, and garlic-mix well. Pour over pork to coat well; cover and chill for 4-24 hours. Remove from marinade and place onto a rack, in a disposable pan. Place pan onto a grill over hot coals. Cover and grill for 60 minutes, basting and turning often. Cover and grill to an internal temperature of 155 degrees. Combine ketchup with remaining marinade-mix well. Brush onto roast and cook to an internal temperature of 160ºF. Remove from grill. Combine dry mustard and water-mix well. Slice pork thinly. Serve hot or warm, with ketchup sauce and mustard mixture to the side.
