    Orange Chocolate Meltaway Truffles

    Adapted from a recipe I found online.. Very rich.. you can use either white chocolate for these, or a combo of your favorite chocolates (we've done semisweet and milk chocolate with good results) For other flavors, you can omit the orange zest and orange extract and substitute a liqueur or your favorite extract (like peppermint)

    List of Ingredients




    Centers:
    18 oz chocolate (can use white chocolate or almond bark)
    3/4 cup heavy cream
    1 tsp orange peel (orange zest)
    2 1/2 tsp orange extract (or less to taste)

    Coating:
    1 c. white chocolate (or use almond bark)
    2 tbl. shortening

    Recipe



    Cut up the 18 oz chocolate and place in glass bowl; pour the heavy cream over it. Heat in microwave in 1 minute increments until the chocolate is melted and you can smoothly blend it with the cream. Stir in the orange zest and the orange extract. (you may find you want more or less extract to taste, and you can make this without the zest if you want). Stir together well and stick in the refrigerator until it starts to thicken.

    Beat with mixer for 10-15 seconds (it doesn't need any more than that. Spoon rounded teaspoonfuls of the mixture onto a baking sheet lined with waxed paper. (can make walnut size if you want). Put back into the refrigeratore until thoroughly chilled and beginning to harden up a bit.

    In microwave, melt the 1 c. white chocolate with the shortening (heat until almost melted and stir to melt it the rest of the way. Be sure mixture is not too hot, since it will melt your centers. May need to let it cool a bit before you use it for coating the centers.)

    Stir the chocolate and shortening until very smooth. Dip your centers into the coating chocolate and cover well. Place coated centers onto the waxed paper lined cookie sheet and put in refrigerator to harden. You can drizzle regular melted chocolate over the top if you want to make them a bit fancier. (We found we needed more coating chocolate to have enough for the whole batch)

    Store in the refrigerator. (they will be ok left out for serving)

    Some other good combinations:
    semisweet chocolate with orange extract
    white chocolate with mint extract (tastes like peppermint milkshake)
    White chocolate and rum
    dark chocolate and peppermint extract
