    Apple Pandowdy w/ Lemon Sauce

    "A lemon and nutmeg sauce tops off this apple dessert with pastry crust."

    List of Ingredients




    6-8 tart cooking apples, pared and sliced (about 2 pounds)
    1 cup sugar
    1 teaspoon ground cinnamon
    1/8 teaspoon salt
    1 teaspoon grated lemon peel
    1 tablespoon lemon juice
    3 tablespoons butter, melted
    pastry for 1-crust 9" pie
    lemon-nutmeg sauce (see below)

    Put apple slices into a 1-1/2 0uart baking dish. Sprinkle with a mixture of the sugar, cinnamon, salt, and lemon peel. Pour the lemon juice and melted butter evenly over the top. Bake at 400 degrees for 25-30 minutes, or until apples are almost tender. Remove baking dish from oven and increase oven temperature to 450 degrees.

    Prepare pastry and roll out to fit over apple mixture. Slit pastry in several places to allow steam to escape during baking. Place on apple mixture. Bake at 450 degrees for 10 minutes, or until pastry is golden brown. Serve hot with Lemon-Nutmeg Sauce or cream.

    Lemon-Nutmeg Sauce

    1/2 cup sugar
    1 tablespoon cornstarch
    1/8 teaspoon salt
    1-1/2 cups boiling water.
    3 tablespoons butter
    1 teaspoon grated lemon peel
    2 tablespoons lemon juice
    1/2 teaspoon ground nutmeg

    Mix together in saucepan sugar, cornstarch and salt. Add gradually, stirring constantly the boiling water. Continue to stir and bring mixture to a boil, simmer 5 minutes. Then blend in the butter, grated lemon peel and ground nutmeg. Serve hot. About 1-1/2 cups sauce.
