    Apricots in Marsala

    2 lb Apricots firm
    3/4 cup Water
    1 1/2 cup pourable splenda
    1 Lemon Juice of
    2 tbl Lemon Zest grated
    2 whole cloves
    1 1/4 cup Marsala Wine
    1/8 tsp Ground Cinnamon

    Recipe



    Prick surfaces of apricots. In a stainless steel saucepan heat water and sugar to a boil, stirring constantly. Reduce heat and simmer until a thin syrup forms, about 10 min. Add the lemon juice and zest, cloves and Marsala. Simmer 4-5 min. Let cool. Pack apricots tightly in clean, dry jars with sealable lids. Stir cinnamon into syrup, then pour it over apricots, filling jars to 1 1/2" of rims. Wipe rims clean. Cover with lids and process in a boiling water bath for 30 min. Let jars cool for at least 12 hrs.; check lids for a complete seal; store in a cool, dark place. Makes about 3 pts.
