    Chocolate Raspberry Cream

    1 package sweet cooking chocolate, divided (4 oz)
    2 cups whipping cream
    1 tablespoon rum
    3 cups fresh whole raspberries
    1/4 cup superfine sugar

    Recipe



    Grate chocolate, reserve 3 tbl. in fridge. Whip cream till soft peaks form. Combine remaining chocolate and whipping cream, blending gently but thoroughly. Stir in rum. Reserve 1/4 c. raspberries in fridge. Toss remaining berries with sugar. (For superfine sugar, blend granulated sugar in blender till fine). Fold sugared berries into chocolate mixture. Spoon gently into stemmed glasses; chill for 1 hour. Do not overchill. Before serving, sprinkle reserved chocolate on top and garnish with reserved berries. Serves 8.
