    White Chocolate Cream with Berries

    3/4 cup whipping cream
    1/4 cup sugar
    2 teaspoons cornstarch
    2 egg yolks
    1 teaspoon vanilla
    4 ounces coarse chopped white chocolate
    1 1/4 cups whipping cream, whipped
    2 cups fresh berries

    Recipe



    Place 3/4 cup whipping cream in 1 quart saucepan. Cook over medium heat until it just comes to a boil, 2-3 minutes. Remove from heat. Meanwhile, combine sugar and cornstarch in medium bowl. Stir in egg yolk with wire whisk until light and creamy, 1-2 minutes. Gradually whisk warm whipping cream into beaten egg yolks. Return mixture to same saucepan; stir in vanilla. Cook over medium heat, stirring constantly, until custard is thick enough to coat back of metal spoon (3-4 minutes). Stir white chocolate into custard until melted. Let cool 35 minutes. Gently mix whipped cream into custard. Spoon 1/4 cup custard mix into individual dessert dishes. Top with 2 tbl. berries. Spoon 1/4 cup custard over berries in each dish and garnish with remaining berries. Cover and refrigerate at least 1 hour or until chilled and slightly firm. Serves 8. Good in parfait glasses.
