    Bread-Muffin: Caramel Pecan Upside Down Muffins

    List of Ingredients

    1/3 cup brown sugar
    2 tablespoons butter, softened
    pecan halves, 3-4 per muffin cup
    1 cup flour
    1 cup quick cooking oats
    1/4 cup sugar
    3 teaspoons baking powder
    1/2 teaspoon salt
    1/2 teaspoon baking soda
    1/4 cup butter
    1 egg
    1 cup buttermilk

    Recipe

    Preheat oven to 400ºF. Blend brown sugar with the 2 tbl. butter. Evenly pat brown sugar mix into muffin cups, and arrange pecan halves on top of the mixture. In a large bowl, mix the flour, oats, sugar, baking powder, salt and baking soda. Cut the butter into the mixture. Blend the egg with buttermilk, and stir into flour mix just til dampened. Spoon batter into muffin cups, on top of pecan halves. Bake for 15-20 minutes. Makes 12 muffins.
