    Cookies: Cinnamon Pecan Sandlots

    List of Ingredients

    2 1/2 cups sugar
    2 cups unsalted butter
    2 eggs
    4 cups flour
    1/4 cup sugar
    1/2 teaspoon ground cinnamon
    1 egg white, beaten
    1/2 cup pecan halves

    Recipe

    In a large bowl cream together first addition of sugar and butter; beat in eggs, one at a time, until smooth. Gradually blend in flour, wrap dough in plastic wrap and refrigerate overnight. Once dough has chilled, preheat oven to 350ºF. Mix together sugar and cinnamon; set aside. Working quickly, roll out half of chilled dough to 1/8-inch thick on a well-floured board, keeping the other half chilled. Cut into diamonds with a knife, place on lightly greased baking sheet. Brush each cookie with beaten egg white. Sprinkle with sugar/cinnamon mixture. Place 1 piece of pecan in the center of each cookie. Bake 8 to 10 minutes or until the edges are light brown. Cool on baking sheets for 1 minute, then remove to wire racks to cool.
