    Bread-Muffin: Coffee Streusel Muffins

    List of Ingredients

    WET MIX:
    1/4 cup softened butter
    1/2 cup brown sugar
    2 eggs
    1 1/2 cups plain yogurt

    DRY MIX:
    3 cups self-rising flour
    1/2 teaspoon cinnamon
    1/2 cup chopped walnuts

    TOPPING:
    1 tablespoon brown sugar
    1 tablespoon butter
    1 teaspoon cinnamon
    2 tablespoons chopped walnuts

    Recipe

    Preheat oven to 400ºF, prepare pans. Blend the butter and sugar and beat in the eggs and yogurt. Fold the previously combined dry mix into the wet mix and place into pans. Blend the topping ingredients together and place this on the top of the muffins, pressing it slightly into the batter to help it stick. Bake for 20 minutes. Makes 15. These muffins are lovely served with honey.
