    Bread-Muffin: Victoria Inn Park's Zucchini Muffins

    List of Ingredients

    3 cups flour
    2 cups shredded, unpeeled zucchini
    1 1/2 cups sugar
    1 teaspoon salt
    1 tablespoon baking powder
    3/4 teaspoon baking soda
    1 cup raisins
    1 cup chopped nuts
    1 teaspoon nutmeg
    1 teaspoon cloves
    1 teaspoon cinnamon
    1/2 teaspoon ginger
    1 cup oil
    3 eggs

    Recipe

    In a large bowl, combine flour, zucchini, sugar, salt, baking powder, soda, raisins, nuts and spices. In a small bowl, combine oil and eggs. Pour the oil mixture over the dry ingredients and stir well until entirely mixed. Spray 2 regular-sized muffin tins with cooking oil spray. Put 1/4 cup of batter in each muffin cup. Fill any empty cups in the tins 1/2 full of water. Bake in a preheated 350ºF oven for 25 to 30 minutes. Serve warm. Makes 20 muffins. You also may prepare this recipe as a loaf bread: Bake at 350ºF for 1 1/2 hours.
