    "This flavorful soup combines a unique selection of ingredients to make for a simple savory soup. The apples and oats meld into the soup to add body and a unique flavor that you would never have guessed came from apples and oats. I was shocked and pleasantly surprised to read the ingredient list after I sampled this soup at a friends party. This soup has no added fat and is full of lots of great nutrients and vitamins. It has a brilliant golden color that will brighten any fall table. Serve as a starter, or as the main dish with some crunchy French bread and a crisp salad. Garnish this soup with fresh chives or parsley and a swirl of fat free plain yogurt if desired. Herbed toasted croutons also make a nice addition."

    List of Ingredients




    5 cups vegetable stock
    1 1/2 pounds peeled and chopped sweet potatoes
    1 1/2 pounds peeled and chopped carrots
    3 medium tart peeled and chopped apples
    1 medium chopped onion
    1 chopped garlic clove
    1/3 cup old-fashioned rolled oats
    2 teaspoons curry powder (or to taste)
    salt
    white pepper

    Recipe



    Combine all of the ingredients in a large heavy soup kettle and bring to a boil over high heat. Reduce the heat, cover, and simmer for 30 minutes. Puree the soup in small batches in a blender or food processor and return to the soup kettle. Reheat and adjust the seasonings if desired. Serve hot.
