    Devilish Desserts: Pumpkin Orange Cake

    1 package yellow cake mix (no pudding added)
    3 teaspoons pumpkin pie spice
    2 teaspoons baking soda
    1 1/2 cups canned pumpkin puree
    2 eggs
    1/4 cup orange juice
    3 tablespoons grated orange peel
    1 cup chopped walnuts
    1 cup golden raisins, plumped overnight in orange juice

    Raisins can be substituted with 1/2 cup mini chocolate chips. To plump raisins quickly, pour boiling water over the raisins and allow to stand for 5 minutes, then drain and pat dry with paper towels. Beat together cake mix, pumpkin pie spice, baking soda, pumpkin, eggs and orange juice for about 3 minutes. Beat in remaining ingredients until blended. Pour batter into greased and lightly floured 10" tube pan with a removable bottom.

    Bake at 350ºF for 45 minutes or until a cake tester, inserted in center, comes out clean. Allow cake to cool in pan. When cool, remove from pan and drizzle top with Orange Glaze, allowing a little to run down the sides of the cake. Serves 12.

    For glaze: combine 11/2 tbl. orange juice with 1 tbl. grated orange peel. Add up to 1/2 cup sifted powdered sugar, only enough to make glaze a drizzling consistency. Stir in 1/4 c. finely chopped walnuts.
