    Leftover Turkey: Turkey Pasta Salad

    List of Ingredients




    cooked fusilli pasta (6 oz raw) 4 cups
    cooked turkey breast, cubed 2 cups
    long english cucumber, cubed 1/2
    tomatoes, chopped 2
    coloured bell pepper, thinly sliced (red, green, yellow) 1
    medium red onion, diced 1/2

    Dressing:    
    red wine vinegar 1/2 cup
    vegetable oil 1/4 cup
    dried basil 1 tsp
    dried oregano 1/2 tsp
    clove garlic, minced 1
    salt and pepper to taste
    feta cheese, crumbled 1/2 cup

    Recipe



    In a large bowl, mix together the pasta, turkey, cucumber, tomatoes, peppers and onion. To make dressing mix together the vinegar, oil and spices. Pour over the salad in the bowl and toss with the feta cheese. Season with salt and pepper. Makes 6 servings.
