    Stuffing: Three Mushroom Stuffing

    List of Ingredients

    1 loaf french bread, cubed
    1/2 cup mushrooms- button, shitake,
    chanterelle, porcini, etc -- cut thick dice
    1 large shallot, diced
    1 clove garlic, minced
    2 slices lowfat turkey bacon, diced
    1/4 cup skim milk or water
    season salt, pepper and sage
    1 cup chicken or turkey broth

    Recipe

    In a large bowl soften the bread cubes with the milk or water and set aside. In a no-stick saute pan cook turkey bacon, shallot, garlic and mushrooms until soft but not brown. Add seasonings and mix thoroughly. Add saute mixture to bread cubes and mix well. Place mixture in casserole dish and pour stock over. Cook along with your turkey for the last 45 minutes. Add stock if necessary. Serving Suggestions: This is best served hot with some low-fat gravy. It is a great side dish for other nights too.
