    Country Ham & Cornbread Casserole

    List of Ingredients




    2 cup Ham cubed cooked ham, * see note
    1/2 cup Green onions chopped
    1/4 cup Margarine or butter melted
    2 lrg Eggs beaten
    1 can corn w/red and green peppers (11 oz) drained
    1 can cream style corn (8.5 oz)
    1 cup Martha white self-rising white cornmeal
    3/4 cup Buttermilk
    4 oz shredded cheddar cheese (1 cup)

    Recipe



    Heat oven to 350 F Grease 12x8-inch (2 quart) baking dish. In large bowl, combine all ingredients except cheese. Pour into greased baking dish. Bake at 350 F for 45-55 minutes or until golden brown and set. Sprinkle with Cheese. Bake an additional 2-3 minutes or until cheese is melted. Let stand 5 minutes before serving. Cut into squares.

    * NOTES : This recipe calls for Country Ham -- can substitute regular ham if desired.
