    Chicken Breasts Stuffed with Feta

    List of Ingredients





    3 ounces soft, sharp feta cheese
    1/2 teaspoon minced garlic in oil
    1/2 tablespoon chopped fresh basil
    1 tablespoon lemon juice
    fresh ground pepper to taste
    4 chicken breast halves -- boneless, skinless
    2 tablespoons olive oil
    6 tablespoons dry white wine or dry vermouth
    basil leaves for garnish

    Process cheese, garlic, basil, lemon juice and pepper in food processor. Wash and dry chicken breasts -- divide feta cheese filling equally and spread on half of each breast. Fold over the other breast half and press edges together to seal. Heat oil in skillet and brown breasts on both sides. Reduce heat, add wine and cover. Simmer about 10 minutes, until chicken is cooked. Decorate with basil leaves and serve with sauce.
