    List of Ingredients




    CHICKEN:
    1 1/2 cups crushed corn flakes
    1 teaspoon paprika and poultry seasoning
    1/2 teaspoon whole thyme and pepper
    3/4 cup egg beaters® 99% egg substitute
    6 skinned and boned chicken breast halves

    GRAVY:
    2 tablespoons liquid butter buds
    2 tablespoons flour
    1 cup evaporated milk
    1/2 cup chicken broth
    2 teaspoons cooking sherry
    1/2 teaspoon white pepper
    3 tablespoons chopped fresh chives

    Recipe



    Chicken: Place cereal and seasonings in shallow dish, stirring well to combine. Pour egg beaters into shallow bowl. Dip chicken into egg and then dredge in cereal mixture. Place coated chicken into baking dish and bake at 350ºF for 30-35 minutes. Spoon gravy over chicken to serve.

    Gravy: Combine liquid butter buds and flour in saucepan. Over low heat, gradually add milk, broth and sherry, stirring til smooth. Cook till thickened. Add salt and pepper. Add chives. Serve over chicken. Yield: 2 c. gravy.
