    List of Ingredients




    4 chicken breast, no skin, no bone, ready to cook
    1/2 cup crushed fat free wheat crackers
    3 tablespoons fresh cilantro
    2 tablespoons cornmeal
    1 tablespoon pine nuts
    2 large cloves garlic, peeled
    1 1/2 teaspoons cumin
    1/2 teaspoon oregano leaves, crumbled
    1/4 teaspoon cayenne
    1/8 teaspoon ground cloves
    1/4 cup egg beaters® 99% egg substitute
    2 tablespoons dijon mustard
    1 tablespoon water
    2 teaspoons honey
    1/4 teaspoon pepper

    Recipe



    Place crackers, cilantro, cornmeal, pine nuts, garlic, cumin, oregano, 1/4 tsp salt, cayenne and cloves into food processor. Process to form fine crumbs. Add egg beater and mix till moist. Place mixture on large shallow plate and set aside. In small bowl, mix mustard, water and honey; brush over chicken. Sprinkle chicken with salt and pepper. Dip chicken into bread crumb mix and press gently to adhere thin coating. Place chicken on rack in jellyroll pan that's sprayed with cooking spray. Bake at 400ºF for 40 minutes or til chicken crisp and lightly brown and fork can be inserted with ease. Serves 4.
