    Orangy Chicken Dijonnaise

    1Ú2 c Dijonnaise
    3 tbs orange juice
    2 tbs honey
    1 tbs corn oil
    4 boneless, skinless chicken breast halves (about 1 lb)
    1Ú2 tsp salt
    1Ú4 tsp pepper
    1 pkg (10 oz) fresh spinach; rinsed and well drained

    Recipe



    In small bowl, stir Dijonnaise, orange juice, and honey; set aside. In large skillet, heat corn oil over medium heat. Sprinkle chicken with salt and pepper. Add chicken to skillet and cook 10-12 minutes, turning occasionally, until lightly browned and cooked through. Remove chicken from skillet. Add spinach to skillet. Cook, stirring until partially wilted. Spoon onto platter. Top with chicken. Add honey mixture to skillet. Cook, stirring 1 minute. Pour over chicken and spinach.
