    Parsley Parmesan Chicken Breasts (bone-in)

    List of Ingredients

    1/2 cup dijon mustard
    1/4 cup dry white wine
    1 clove garlic, crushed
    1 cup fresh bread crumbs
    1 cup grated parmesan cheese
    3 tablespoons minced shallots
    1/4 cup minced fresh parsley
    1 tablespoon unsalted butter, melted
    1/4 teaspoon salt and pepper
    1 1/2 pounds bone-in chicken breasts

    Recipe

    Preheat oven to 375ºF. Line a 13x9 inch baking pan with foil. In a pie pan, whisk together the mustard, wine and garlic. In another shallow pan, thoroughly combine the crumbs, parmesan, shallots, 3 tbl. of the parsley, melted butter, salt and pepper. One at a time, flop each chicken breast around in the mustard-wine mixture until it's coated; roll it in the crumb mixture until it's liberally coated with that. Bake the chicken breasts in the pan for 25-30 minutes or until they're cooked through. Sprinkle the remaining 1 tbl. of parsley over the chicken and serve immediately. Can also serve at room temperature or chilled. Serves 4.
