    Sole: Sole with Leeks & Lemon

    List of Ingredients

    2 tablespoons butter
    2 leeks -- chopped, washed well
    2 shallot -- minced well
    3 cloves garlic -- minced
    2 tomatoes (seeded) -- peeled and chopped
    1/4 cup dry white wine
    1/2 cup half and half
    2 tablespoons lemon juice
    2 pounds sole fillet
    2 tablespoons parsley -- chopped

    Recipe

    Sprinkle sole with salt, white pepper and paprika. In saucepan, saute together butter, leek (only use white and soft greens), shallot and garlic until the leeks are soft. Add tomatoes and wine, and cook until most of the liquid evaporates. Add cream, lemon and seasonings. simmer 10 minutes. Place fillets in one layer in greased baking pan and bake in 350ºF oven for 10 minutes or until done. Spoon sauce on top and heat through. Serves 6.
