    2 eggs -- beaten
    2 cups cottage cheese
    1 cup parmesan cheese
    1 cup mozzarella cheese -- shredded
    4 tablespoons parsley
    1 teaspoon oregano
    1 pound hamburger(OPTIONAL) -- cooked
    1 box large shell pasta -- slightly undercooked

    SAUCE:
    2 cans tomato sauce
    1 can tomato paste
    1 pinch oregano
    salt to taste
    1 garlic clove(OPTIONAL) -- crushed

    TOPPING:
    1 small amount dried oregano
    parmesan cheese

    Preheat oven to 375ºF. Combine egg, cottage cheese, cheeses, parsley and oregano. If using hamburger, add now. Stuff mixture into shells. Arrange in shallow baking dish. To make sauce, cook all ingredients over medium to low heat until it seems done, about 15-30 minutes. Pour a small amount of sauce on each arranged shell. Add dried oregano and parmesan cheese to top. Bake for 50-55 minutes.

    (Original poster's )NOTES : I developed this recipe from a diet cookbook. It's good without the meat, but if I have company I usually add the hamburger. The frugal gourmet gets the credit for showing me to bake the sauce on top. It freezes well, but I freeze the pasta and sauce individually.
