    2 pounds crawfish tails
    6 cups milk
    1/4 cup butter or margarine
    1/4 cup flour
    1/2 teaspoon minced garlic
    3/4 cup Dijon mustard
    1/8 teaspoon cayenne pepper
    1 teaspoon salt
    1/2 cup chopped green onions
    1 pound pasta cooked

    In a large bowl, soak crawfish tails in milk for 1 hour.  Strain the milk into another bowl. In a large saucepan, melt butter; stir in flour and cook, stirring constantly, for 5 minutes.  Add garlic; cook for 1 minute.  Slowly add crawfish milk; cook, stirring constantly until mixture thickens and bubbles.  Stir in cayenne, salt, and mustard; simmer for 5 minutes.  Add crawfish tails and green onions; simmer for 3 minutes.  Serve over pasta.
