    Tortellini: Tortellini Alla Romana

    List of Ingredients

    1 pound fresh tortellini (cheese or veal)
    1/4 pound grated parmesan cheese
    1/2 cup finely shredded prosciutto
    1/4 pound butter, cut into 8 pieces
    1 cup half and half
    1 cup freshly cooked peas

    Recipe

    Cook pasta in boiling salted water as directed; drain and place in dry pan. Gently heat pasta. Add butter and grind pepper over pasta. Add half of the half and half and allow to heat thoroughly, tossing once or twice, until most of it is absorbed. Add cheese, peas and prosciutto. heat, still tossing gently, for 2-3 minutes, until the pasta is evenly coated with melted cheese. Serve immediately.
