    2 tbl vegetable oil
    3 med Granny Smith apples peeled, chopped
    1 potato peeled, chopped
    1 celery stalk chopped
    1/4 cup finely-chopped onion
    1/8 tsp ground thyme
    1/4 cup white wine
    5 cup chicken stock
    4 cup grated mild Cheddar cheese
    1/2 cup heavy cream
    1/8 tsp nutmeg
        Salt to taste
        Freshly-ground white pepper to taste
        Buttered croutons
        Unpeeled diced apples

    Recipe



    * Heat oil in large saucepot; add apples, potato, celery, onion and thyme. Saute 10 minutes. Stir in wine and simmer 2 minutes; add stock and simmer 45 minutes.

    * Puree soup mixture. Return to saucepot; over very low heat, and stir in cheese, cream, nutmeg, salt and pepper to taste. Cook just till heated through - do not allow to boil. Garnish with croutons and diced apples.

    * This recipe yields 4 servings.
