    Broccoli: Broccoli, Hamburger & Cheese Soup

    List of Ingredients

    1 1/2 cups water
    2 chicken bouillon cubes
    10 ounces frozen broccoli
    1/4 cup finely chopped onion
    2 tablespoons butter or margarine
    3 tablespoons all purpose flour
    1/4 teaspoon salt
    1/8 teaspoon pepper
    2 cups milk
    1 cup cubed process cheese
    1 pound ground beef, browned and drained

    Recipe

    In a saucepan, bring water to a boil; add bouillon and stir until dissolved. Add broccoli; cook according to package directions. Do not drain. Remove from the heat; set aside. In a large saucepan, cook onion in butter until tender. Add flour, salt and pepper; stir until well blended. Remove from heat and stir in enough ilk to make a smooth paste; stir in remaining milk. Return to heat; bring to a boil and boil for 1 minute, stirring constantly. Add cheese, ground beef, broccoli and cooking liquid. Cook until heated through and the cheese is melted, stirring occasionally. Serve hot. Yield: 6 servings.
