    Cabbage: Cabbage Soup w/ Caraway

    1/4 pound sliced bacon, diced
    1 onion, chopped
    2 tablespoons flour
    1 1/2 quarts chicken stock
    1 small head cabbage, chopped
    1 medium carrot, diced
    1 potato, peeled, finely diced
    2 tablespoons white wine vinegar
    1 teaspoon caraway seed
    salt & pepper to taste
    1 cup grated gruyere or swiss cheese

    In large soup pot, fry bacon. Drain off fat. Add onion. Cook, stirring, until onion is soft but not brown. Stir in flour. Cook 1 minute, then whisk in broth. Increase heat to medium-high and bring to boil. Add cabbage, carrot, potato, vinegar, caraway seed, salt and pepper. Reduce heat to low. Simmer until vegetables are very tender, about 30 minutes. Add salt and pepper. Add vinegar if desired.

    When ready to serve, spoon boiling soup into 8 oven-proof soup bowls. Sprinkle with cheese. Set bowls on baking sheets and place in 450-degree oven. Bake until cheese melts and browns, about 5 minutes.
