    Sausage: Cajun Sausage Soup

    List of Ingredients

    1 1/2 lbs. mixed sausages (Cajun Andouille, Italian, etc.), cut into 1/2-inch rounds
    3 Tbsp olive oil
    2 large onions sliced
    2 large leeks sliced
    2 cloves garlic pressed (2 to 4)
    3 cans Cajun-style stewed tomatoes (3 to 4)
    1 medium green bell pepper chopped
    3 small zucchini sliced into1/2-inch rounds
    2 medium carrots thinly sliced
    1 small can Garbanzo beans drained
    1 1/2 cups dry red wine
    8 cups beef stock (8 to 9)
    1 tsp Cajun Dust Seasoning
    1/2 tsp oregano
    1/2 tsp sweet basil
    Salt to taste
    1/2 tsp ground pepper
    3 Tbsp fresh parsley finely chopped
    1 thin pasta (9 ounces) cut into short lengths (9 to 10)
    Parmesan cheese for each serving

    Recipe

    Saute sausages in large skillet until lightly browned. Drain well. In large soup pot, saute onions, leeks, and garlic in oil over medium-high heat until limp. Add all remaining ingredients except pasta and Parmesan. Simmer slowly for one hour. Add pasta and continue simmering for 30 minutes. Serve with Parmesan sprinkled on top. Serve with hot sourdough French bread.
