    Cold: Chilled Dilly Pea Soup

    List of Ingredients

    2 cups fresh shelled peas
    2 green onions, sliced
    2 cups defatted chicken broth
    1/2 teaspoon dried dillweed
    1 cup plain yogurt or sour cream

    Recipe

    In microwave-safe casserole, combine sliced onions, peas, 1/4 c. of chicken broth and dillweed. Cook on high, covered, for 8-10 minutes or until tender. Do not drain. Uncover and cool slightly before adding remaining chicken broth. In blender, process pea mixture until smooth. Transfer to bowl and cover to chill. At serving time, blend in cup of yogurt or sour cream. Serves 4 as side dish.
