    Seafood Chowder: Buny's Clam Chowder *

    List of Ingredients

    2 ribs celery, chopped
    2 cans whole clams (reserve broth)
    2 cans crabmeat
    1 large onion, chopped fine
    1 cup cream, heated
    1 cube salt pork, diced
    4 medium potatoes, diced
    2 cups milk, heated
    salt and pepper to taste

    Recipe

    Wash and chop clams. Fry salt pork in deep saucepan until it renders a lot of its fat. Add onions and cook slowly until they begin to turn golden brown. Add the clams and reserved broth (plus water to make total of 5 cups of liquid). Add potatoes and celery; season with salt and pepper. Cook until potatoes are tender. Add crabmeat at the end of cooking. Remove mix from heat and slowly add the warm milk and cream. Thicken with cornstarch/water mixture if needed (or you can sprinkle in instant mashed potato flakes gradually until reach desired thickness) and season to taste. Serves 6.
