    Fruit: Cool Berry Soup

    List of Ingredients

    1 pint strawberries, stemmed
    1/2 cup blueberries
    1/2 cup raspberries or blackberries
    4 slices fat free cake
    fat free whipped cream
    sugar to taste

    Recipe

    Puree 2/3 of the strawberries and half the other berries, reserving the rest, with enough sugar to sweeten them, usually a tablespoon or two at most. Slice the remaining strawberries.Gently fold remaining berries into puree. Place a slice of cake in a soup bowl, top with "soup" and a dollop of fat-free whip cream.

    Serving Suggestions: You can also top this dish with sorbet or ice milk instead of the whipped cream. I also spice it up with a small sprinkle of cinnamon and a sprig of mint for a garnish.
