    Tomato: Curried Tomato Soup

    List of Ingredients

    1/2 cup chopped onion
    1 small clove garlic -- minced
    2 teaspoons olive oil
    3/4 teaspoon curry powder
    1 1/2 pounds tomatoes -- halved, cored, and seeded
    1 1/2 cups chicken broth
    1/2 teaspoon dried fines herbes -- crushed
    1/4 teaspoon salt
    1/8 teaspoon pepper -- (1/8-1/4)

    Recipe

    In a saucepan cook onion and garlic in hot oil till tender. Add curry powder; cook and stir for 1 minute more. Add tomatoes, broth, fines herbes. salt, and pepper. Brine to boiling; reduce heat. Cover and simmer for 10 minutes. Cool slightly. In a food processor or blender container cover and process cooled mixture, half at a time. till smooth. If you like, press through a sieve. Serve hot or chilled. If you like top with yogurt, fresh thyme and quartered cherry tomatoes. Makes 6 side-dish servings.
