    Mushroom: Dr. Weil's Mushroom Barley Soup

    List of Ingredients

    1 cup medium pearl barley
    6 cups vegetable stock
    1 1/4 cups chopped onions
    2 cloves minced garlic
    3 tablespoons extra virgin olive oil
    1 pound fresh mushrooms, sliced (shiitake)
    4 tablespoons dry sherry
    4 tablespoons soy sauce (to taste)
    2 teaspoons dried dill weed

    Recipe

    Rinse and drain the barley. In a large pot, cook the barley, covered, in 1 1/2 cup of the stock until tender. Saute the onions and garlic in the olive oil until they are translucent. Add the mushrooms and sherry, and cook uncovered until the mushrooms are soft. Add the mushrom mixture to the barley with the remaining stock and the rest of the ingredients. Bring the soup to a boil, reduce heat, cover and simmer for 20 minutes, then serve.
