    Carrot: Dr. Weil's Yellow Pepper & Carrot Soup

    List of Ingredients

    2 1/2 tablespoons extra virgin olive oil
    3 large carrots, peeled and cut into rounds
    1 cup leeks, whites only washed and cut 1/2" pieces
    1 large yellow pepper, seeded, cut 1" squares
    3 sprigs fresh rosemary
    1 pinch ground cumin
    3 1/2 cups vegetable stock
    salt and black pepper to taste

    Recipe

    In large pot, heat the olive oil over medium heat, add the carrots, leeks, pepper, rosemary and cumin; stir well, cover and cook for 10 minutes. Add the stock, and season to taste with salt and pepper. Simmer uncovered for 20 minutes or until the carrots are tender. Remove the rosemary and puree the soup in food processor. Serves 4.
