    Beef: Frank's Sicilian Soup

    List of Ingredients

    1/2 lb. ground beef
    5 tablespoon fresh parsley, chopped
    1/4 cup parmesan, grated
    2 tablespoon dry bread crumbs
    1 egg, beaten
    5 cloves garlic, minced
    2-1/2 teaspoon salt
    1/2 teaspoon black pepper
    2 tablespoon olive oil
    2 carrots, diced small
    1 medium onion, chopped
    2 ribs celery, diced small
    1 medium zucchini, diced small
    1-1/2 quarts chicken broth
    1 cup tomatoes, crushed
    1 small can tomato puree

    Recipe

    In a medium bowl, mix together the beef, parsley the parmesan, bread crumbs, egg half the garlic, 1/2 teaspoon salt and 1/4 teaspoon pepper until thoroughly combined. Shape mixture into 24 meatballs.

    In a large heavy soup pot, heat the oil over medium heat. Add the carrots, onion, celery, and the remaining garlic and cook, stirring occasionally, until the veggies start to soften. Add the zucchini and cook for 5 minutes. Stir in the rest of the ingredients, bring to a boil. Reduce heat, simmer partially covered for about 1/2 hour and serve with some hard crusty bread or rolls.
