    Potato: Kale Potato Soup

    2 bunches fresh kale, washed, chopped
    8 beef bouillon cubes
    2 potatoes peeled, cubed
    soup meat or kielbasa sausage, sliced thin

    Recipe

    In a large stock pot, brown soup meat in a little butter. Add about 1-gallon water and bouillon cubes and bring to boil. Once boiling reduce heat to medium and cook for about 1 hour until meat is tender. If using kielbasa this step can be eliminated. Make sure kale is thoroughly washed and chopped, removing large ends of stems. Add kale to stockpot and simmer till leaves wilt down (about 15 minutes or so). Next add cubed potato and kielbasa sausage. Cook for another 10-15 minutes until potatoes are done. Season with Maggi seasoning, this can be found in the condiment isle at super market.
