    Potato: Lowfat Potato Leek Soup

    James Peterson's Splendid Soup

    List of Ingredients

    3 medium waxy potatoes, peel and cut 1/2" dice
    4 cups fine sliced leeks, tough greens removed
    4 1/2 cups water, milk, veg or chicken stock
    unsalted butter or herbs to taste

    Recipe

    Combine potatoes, leeks and water in 4 quart pot and bring to simmer, cooking gently until potatoes are tender (about 20 minutes). Add salt to taste. Ladle soup into bowls and put slice of butter on each serving. Can convert to creamy soup by puree half or all of soup. Makes 6-8 servings.
