    Potato: Spicy Potato Soup

    TOH Ground Beef Recipe Collection Vol 3, 1999

    List of Ingredients




    1 pound ground beef
    4 cups cubed peeled potatoes (1/2" cubes)
    1 small onion, chopped
    3 cans tomato sauce (8 oz each)
    4 cups water
    2 teaspoons salt
    1 1/2 teaspoons pepper
    1/2 to 1 tsp hot pepper sauce

    In a large Dutch oven or soup kettle, brown ground beef ; drain. Add potatoes, onion and tomato sauce. Stir in water, salt, pepper and hot pepper sauce. Bring to a boil; reduce heat and simmer for 1 hour or until potatoes are tender and the soup has thickened. Yield: 6-8 servings (2 quarts).
